Lyngby, Denmark Received 26 September 2003/Accepted 8 March 2004 Quorum-sensing (QS) signals (N-acyl homoserine lactones [AHLs]) were extracted and detected from five commercially produced vacuum-packed meat samples. Ninety-six AHL-producing bacteria were isolated, and 92 were identified as Enterobacteriaceae.

N-Acyl homoserine lactones (Abbreviated as AHLs or N-AHLs) are a class of signaling molecules involved in bacterial quorum sensing.Quorum sensing is a method of communication between bacteria that enables the coordination of group-based behavior based on population density.

Non-native acylated homoserine lactones reveal that LuxIR quorum sensing promotes symbiont stability Quorum sensing, a group behaviour coordinated by a diffusible pheromone signal and a cognate receptor, is typical of bacteria that form symbioses with plants and animals.

Many Gram-negative bacteria use acylated homoserine lactones (HSLs) as autoinducers. Because of the broad biological functions of HSLs, interest in detection and analysis of HSLs is increasing with a view to their medical, biotechnological, and agricultural applications.

Despite thirty years of mechanistic research, empirical studies have only recently addressed the benefits of QS and provided support for the traditional assumptions regarding its social nature and its role in optimizing cell-density-dependent group behaviors. Most Gram-negative bacteria use N -acylated homoserine lactones (AHLs) as signal molecules. The general structure of these compounds consist of a lactone ring with an acyl side chain. The length of the acyl chain is usually between 4–18 carbons and the functionality at the β-carbon position can vary. The most commonly studied AIs belong to one of the following three categories: acylated homoserine lactones, also referred to as AI-1, used by Gram-negative bacteria; peptide signals, used by Gram-positive bacteria; and AI-2, used by both Gram-negative and Gram-positive bacteria. Primarily produced by Gram-negative bacteria, acylated homoserine lactones (AHLs) are a class of small neutral lipid molecules composed of a homoserine lactone ring with an acyl chain. AHLs produced by different species of Gram-negative bacteria vary in the length and composition of the acyl side chain, which often contains 4 to 18 carbon atoms.
